a food post: Oatmeal Topped w/ Toasted Coconut, Pecans & Almonds

I was told recently to put the things I made up online if for no other reason then to have a record.

I have been on the search for a good steel cut oatmeal recipe for some time now. I found one I really like here it's great. I would try to re-word or pretend I made changes but I didn't and it works perfectly so follow the link there. The topping on the other hand is all me.

Oatmeal Finishing Touches

ingredients

  • a couple handfuls of unsweetened coconut
  • half handful of chopped pecans
  • half handful of chopped almonds
  • light drizzle of honey
  • real maple syrup

how

  1. heat oven to 400°F

  2. spread coconut on parchment lined baking sheet

  3. drizzle a bit honey over top coconut

  4. when honey starts to bubble take sheet out of oven stir a bit and turn off oven and put sheet back in

  5. when the desired toasty color is reached take out and set aside to cool

  6. stir in nuts

  7. place some of the nutty goodness on top of oatmeal & add a trickle of maple syrup if you want some extra sweetness.

Hope you make this or at least visit me and I can make it for you. Enjoy!
